COCONUT & RASPBERRY PROTEIN BALLS
Not a week goes by where I don’t have some version of energy balls or bars in my fridge, so you can expect to see quite a lot of these here. They are so handy to have ready at your hands when the hunger or cravings hit and you don’t go for that chocolate bar or the bag of crisps. When it comes to ingredients, I usually go with what I fancy that day and what I have in my cupboard, although flaxseed will always go in. It’s a great source of Omega 3, protein, iron, magnesium, zinc AND fibre so always good to add to any meal really.
Energy Balls are a great pre- or post-workout snack, or with your afternoon coffee or tea, and they will last a long time in your fridge or even your freezer. If you keep them in the freezer, just remove them 5-10 minutes before consumption.
MAKES: 8 BALLS (app. 30-35g each)
TIME: 10-15 MINUTES
2 tbsp vanilla protein powder
4 tbsp oatmeal (ground oats - you can use whole oats, the texture might be a little coarser)
2 tbsp hemp hearts
2 tbsp dessicated coconut (and a little more to roll them in)
2 tbsp milled flaxseed
3 tbsp freeze dried raspberries
4 large medjool dates (stone removed)
pinch of salt
1. Place all the ingredients in a food processor and blend to a flour like texture. Ensure all is well mixed.
2. Add 2 tablespoons of water and blend again until a dough is formed. This should be enough, if you add too much water, the dough will become too wet and too sticky.
3. Roll into balls, then roll each ball in some extra dessicated coconut.
4. Keep in the fridge or freezer.
